Pickled Beets from Scratch

Did you know that there are great health benefits from eating beets? For one, they are low in calories, contain fiber, vitamin C, and folate, and may help lower blood pressure. Not to mention, the juice from the beets can make a tasty salad dressing and the apple cider and sugar flavor can curve the junk food cravings. Pickled beets, in my opinion, are the best snack. Making it from scratch is healthier because at least you know your ingredients. Even the best foods could be bad for your health if it consists of ingredients you can’t even pronounce! So, this year I’m putting in the effort to eat healthier by making my food from scratch!

**Portion may vary, will fit inside a 16oz to 32oz mason Jar**

Prep time: 1 hour

What you’ll need:
• 4 medium, partially ripe beets
• ½ cup of sugar
• ¼ cup of apple cider vinegar
• Medium-sized pot
• A peeler

Preparation:
• Before I cut or bite through any produce, I like to wash every trace of dirt. After all, they were grown in the ground.
• After the wash, peel the beets and slice them ½ inch thick.
• Place beets in a medium pot, filling the water above the beets.
• Checking occasionally, boil beets until soft. Make sure the water does not boil out. If so, refill pot over beets.
• Once the beets have softened, add the ½ sugar and the ¼ apple cider vinegar. Please do not drain the water.
• Let cool, add the mixture to the mason jar, and store in the fridge.
• Enjoy!!
