This recipe serves 4 people
- Time to prepare, 30 mins.
- 4 Glass bowls (optional) that are safe for baking. You may also use small pie pans.
- 1/2 pound of boneless/skinless chicken cutlets.
- 1 can of Campbell’s Cream of Chicken Soup (condensed).
- 1 cup of Uncle Ben’s rice.
- 2 cups of frozen mixed vegetables (small- carrots, peas, and corn).
- Pillsbury pizza crust rolls. Or if you have time, make your own crust!
- 1 TBSP of melted butter.
Cooking Directions:
****First and most importantly, please prepare your raw foods separately. Clean and prepare your chicken cutlets by using a separate cutting board.****
After your chicken is thoroughly cleaned, slice it into small pieces and season to taste. I like to use Adobo, pepper, and parsley. You should not overseason because the condensed soup is enough (High in sodium). Next, add cooking oil to a small frying pan and allow it to heat. Sauté your sliced chicken until it’s golden brown (Don’t not over-fry).
Step 2: Make sure your Uncle Ben’s rice is rinsed. In a saucepan, add 1 cup of rice to 2 cups of water and a pinch of salt (salt is optional). Stirring occasionally, let the rice cook until water boils out of the saucer.
Step 3: While cooking the condensed soup, slowly add a half can of water to loosen. Note: please pay attention to consistency as you don’t want the soup to become watery.
Don’t forget to cook the frozen Vegetables. Drain the water out!!!
Preparing the crust:
On a clean surface, but lightly floured, roll out the pizza crust. Cut out two circles large enough to fit each bowl. Note that one of the circles must be slightly larger than the bowl, so the crust can be placed inside and overlapping the rim of the bowl. The top crust is smaller and this will help with the closure of the pie. Both the top and bottom will be pinched together; as shown in the picture.
Putting it all together:
In a large bowl, add your chicken, rice, mixed vegetables, and condensed soup. Transfer your mixture with a soup ladle into the already prepared pie bowl. With the top crust, close the pie by pinching the sides; making sure there are no openings. Note that if there are openings in your pie, the mixture will flow out! Next with a small fork, poke holes in the center of the pie. Last, brush the melted butter on top with a basting brush. Adding garlic seasoning to your crust is optional, but it tastes so good!
Cooking Time:
Set your oven to 350 degrees. Place pies on a metal cookie sheet. Since the mixture is already cooked, bake the crust for at least 20 minutes or until golden brown. Set aside for 10 mins. Caution, I used a glass bowl, so it was definitely hot to touch. Once cooled, enjoy!!!
